Maple Apple Cobbler
Ingredients
5 or 6 Sliced and Peeled Apples 2/3 cup Maple Syrup 1 tbsp. Flour ½ tsp. Apple Pie Spice or Cinnamon 1 tbsp. Lemon Juice ½ tbsp. Butter ½ cup Sugar ½ cup Flour ¼ cup Butter or Margarine
Instructions
Place apples in an 8" square pan. Mix together the maple syrup, 1 tbsp. flour, spice, lemon juice and ½ tbsp. butter. Blend with the apples. Mix together until crumbly: the sugar, ½ cup flour and ¼ cup butter. Place over apples to cover. Microwave at High for 12 -15 minutes.
Butter Tarts
Ingredients
12 Unbaked Tart Shells ¾ cup Raisins 1 tbsp. Butter 1 tbsp. Maple Syrup 1 cup Brown Sugar 1 tsp. Vanilla 1 Egg, beaten
Instructions
Preheat oven to 400°F Place twelve unbaked tart shells on a cookie sheet. Divide raisins in the shells. In a small pot combine butter, maple syrup and brown sugar over medium high heat, heat until everything is melted and bubbles break the surface of the filling. Use a whisk to stir. Remove from heat and let cool a few minutes. Whisk in vanilla and egg. Pour filling into a glass measuring cup and then fill the tart shells. Bake for about 15 minutes or until shells are lightly browned.
Maple Bacon Biscuits
Ingredients
1 lb. Bacon, cut into 1/2-inch pieces 3 ½ cups Flour 2 tbsp. Sugar 1 tbps. Baking powder ½ tsp. Baking soda ¾ tsp. Salt 2 sticks Butter, cut into ½-inch cubes 1 cup Maple syrup, divided ¾ cup Buttermilk 1 Egg yolk 1 Egg 1 tbsp. Heavy cream Fleur de sel
Instructions
In a medium frying pan, cook the bacon over medium heat until cooked but not crispy, 10 to 12 minutes, stirring frequently. Remove the bacon to a paper towel-lined plate or pan, to remove excess fat. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Using a pastry cutter or fork, cut in the diced butter, until it resembles small peas. Stir in the bacon, then one-fourth cup plus 2 tablespoons of maple syrup and the buttermilk until the dough just comes together (it will still be clumpy). Be careful not to overwork the dough. On a lightly floured surface, gently press or roll the dough to 1-inch thickness. Cut the biscuits using a 2-inch round cutter; you should have 24 biscuits. Place 12 biscuits on each of two parchment-lined baking sheets, spaced 2 inches apart. Freeze the trays just until the biscuits are chilled, about 10 minutes. Heat the oven to 350 degrees. While the biscuits are chilling, prepare the egg wash: In a small bowl, whisk together the egg yolk, egg and cream. Brush the chilled biscuits with egg wash and top each with a pinch of fleur de sel. Bake the biscuits until they just begin to brown, about 25 minutes (you should easily be able to pick the biscuits up off the tray). Remove the tray from the oven. Quickly drizzle 1 teaspoon of the remaining maple syrup over each biscuit, then place the tray back in the oven for 3 minutes more. Serve while still warm.
Laura's Maple Glazed Grilled Veggies
Ingredients
Your favourite local and seasonal produce will taste great with this recipe. We suggest trying the following: • Asparagus, snapped in half • Peppers (any colour), cut in chunks • Onion(s), quartered • Mushrooms, whole or sliced • Cauliflower, pieces pre-steamed in microwave • Broccoli, pre-steam in microwave • Olive Oil • Maple Syrup
Instructions
Preheat barbeque or grill. Prepare a grill basket with a light coating of non-stick cooking spray. Place on BBQ or grill to heat while you prepare your vegetables. In a bowl, mix together 1 part olive oil and 2 parts maple syrup. Toss with your prepared veggies and season with salt and pepper to taste. Add the veggies to the grill basket. Grill until fork tender.

Think out of the bottle when using maple syrup in the kitchen! Maple syrup isn't just for pancakes and waffles – for sweets it can be poured over cereal, ice cream and pumpkin pie. Maple syrup can be used on vegetables such as carrots, turnips and squash or use it to glaze bacon, ham, chicken and pork. Maple syrup makes a great substitute for corn syrup in your favourite baked goods recipes.
Hours of Operation
The pancake house is open Saturday and Sundays from 8am to 2pm starting the first weekend in March every year for six consecutive weekends. We are also open daily during March Break from 9am to 1pm. Syrup and gift sales are available daily through the year.
